The Xyauyù is born from a “wicked thought”, but more importantly from years of research towards a new way of drinking and understanding beer. In the “silver” version, it offers delicate scents of dates and caramel, enveloped by harmonious and persistent oxidized notes. It is a “gate” which leads onto a world of intriguing and truly amazing aromas and sensations.

Its a living top fermented beer which - after being exposed to the air of the Langhe region of Northern Italy, becomes new and unique product. When poured it has no headband no gas, it has a clear, full amber, brownish colour with copper reflections. When initially inhaled it is very intense, with aromas of dried and candied fruit and strong harmonious notes which bring Madeira wines to mind

The most complex of Teo's approach to this style and creation of what he calls "Couch Beers", to be enjoyed and savoured slowly. Like all of this range it is a top fermenting beer which has then been aged for 12 months in Islay Scotch whisky barrels, which give it a natural peaty flavour. It has a deep dark colour with copper nuances, when poured it has no head and no gas.

It is made with spelt by "Mulino Marino" and barley from their own fields, then aged in barrels kept in "Cantina Baladin" which had previously contained some of the most excellent Italian wines. "The Christmas Spirit". An idea Teo had been playing with, with the aid of his friend and accomplices from the "Villa Rosati" distillery in Neive (Northern Italy CN). A distilled 2009 Nöel which has been aged for three long years in oak barrels, until the spirit of the beer has harmoniously blended with the aromas of the barrels. A "gem" for the connoisseurs and those who love to drink with taste and elegance.
Hand crafted Nöel ale distillate, aged in oak barrels. It has a clear straw yellow colour =, taste is smooth with light wooden chocolate notes.

Wayan is made with a combination of cereals – barley, spelt, and wheat – and evokes memories of the countryside and sunny citrus plantations, whose aromas go perfectly together with the scents of orange blossom, pear and bergamot and titillate the palate with clean and peppery notes. Fizzy and extremely thirst-quenching, it has an unmistakable dark golden-orange color and is slightly cloudy, at times even opalescent. Its intriguing and slightly pungent elegance gives a unique touch to shellfish and fish dishes, as well as white meat or fresh cheeses.

Nora, with its charming uniqueness, comes from the ancient history of nomadic people and pyramids. It contains spices and KAMUT®, the very “Ka’moet” which meant " soul of the Earth" in ancient Egyptian. Its warm, orange-amber colour is complemented by a tall head which releases notes of Eastern aromas, ginger and citrus fruit. Its scents and sweetly balanced taste are ideal to accompany spicy dishes, but can also be pleasantly surprising with more traditional food, such as cured meats and cheeses, or with daring combinations, such as artichokes or asparagus.

The first creation in the Baladin family, Super takes inspiration from the abbey beers and interprets them with its own, unique style. The clear amber-reddish color gleams in the glass, its smell is reminiscent of tropical fruit, banana and marzipan. Super is harmony turned into beer and leaves a memory of dried fruit; if you search carefully, you will even find the aromas of almonds. Easy to drink, well balanced and elegant, it can be quite tricky: it’s easy to forget its 8% alcohol! It is the ideal accompaniment to food and perfect to sip in the company of friends.

Elixir, fizzy and with a strong body, is a beer with a unique personality. It is made with yeasts derived from those used for “Islay Whiskies”, it has a beautiful amber color and a thick head. Dry and slightly winy, if offers sensual notes of fruit and smooth caramel. It does not hide its origins and boasts them in the clean heat of the alcohol, which is at times reminiscent of peated spirits. Womanly and erotic, it finds its perfect place on “daring and bold” tables”.

An Ancient ale in every sense. 3 master brewers with different styles, one scientist and a recipe lost for centuries…Until now! The process involved the scientist performing complex analysis on ancient vessels that had been used to hold and store beer during the Etruscan age. From the analysis a recipe was created as close to the original as possible (brewed centuries ago). Using unusual ingredients like, Grano Saragolla (and ancient grain from Italy), Hazelnuts, pomegranates, Honey, tree resin, dried grapes and lastly a 1500 year old yeast.
The process involved a massive amount of research followed by a test batch in Rome with the 3 brewers. Each brewer then went away to brew a batch in a slightly different way. Birra Del Borgo in Terracotta and Birra Baladin in wood (both versions available).. the result fantastic!

Super Bitter is undoubtedly following the trend of bitter beers, but without taking it too far!, Full of hoppy scents - given by the generous use of a particular type of American hop called Amarillo, But it remains true to its Baladin Identity and strikes a perfect balance with notes of caramel, dried fruit (just a hint) and the bitterness of hops. Super Bitter, just as its famous big sister (if not more), will entice you to spend time with others and socialise :-)

We may define this beer as a “cameo”, a dedication, a style exercise. Mama Kriek is inspired by classic kriek, the Belgian fruit beers, but… it contains an indissoluble link to its own land, where it is deeply rooted. A first clear hint of this connection can be seen on the label, with the picture of Teo’s mother. The presence of “mamma Maria” was key for the birth of this beer, when she patiently cleaned and boiled sour griotta cherries for the first production batches. Today Mama Kriek has taken on more refined features, the typical acidity is counterbalanced by a slightly more “woody” flavor, while the aromas of cherries is very vivid, both to the nose and the palate.

Heather honey perfectly delivers the harmony that the master brewer wanted to instill in this beer. It has an old gold color and a tall and fragrant head. When smelling it, the nose is flooded with complex aromas with clear honey notes, as well as a slight scent of bitter orange. The taste is extremely smooth and mellow, it fills the mouth relaxing the senses with a great balance and finishes with an unexpected aromatic bitterness.
